
🍰 4-Ingredient Fruit Cake
It’s so delicious, even the cat tried to steal a piece! 🤣
🛒 Ingredients
1 kg mixed fruit (I also add a pack of glacé cherries)
2 cups chocolate milk
1/2 to 3/4 cup Baileys (adjust to taste)
2 cups self-raising flour
👩🍳 Directions
1️⃣ Soak the Fruits:
Combine the mixed fruit with chocolate milk and Baileys. Let soak for 24 hours.
(Tip: For those unfamiliar, Baileys is a creamy Irish liqueur similar to Amarula.)
2️⃣ Add the Flour:
Gently fold the self-raising flour into the soaked fruits until well combined.
3️⃣ Prepare the Slow Cooker:
Line the slow cooker with 2–3 layers of baking paper on the sides and bottom. I like to double a long strip and place it first — this makes removing the cake much easier after cooking.
4️⃣ Cook:
Pour the batter into the slow cooker and level it out.
Cook on low heat for 7–8 hours, placing a tea towel under the lid to absorb condensation.
(Oven Option: Bake at 140°C for 2 hours.)
✨ Tips & Notes:
You can adjust the amount of Baileys to make it more or less boozy.
This cake keeps well and actually tastes better the next day when the flavors have melded.
Serve plain or with a dusting of powdered sugar.
