📝 Ingredients:

🔹️ 4 boneless, skinless chicken thighs or breasts
🔹️ 1 ½ pounds baby potatoes, halved
🔹️ 1 small onion, sliced
🔹️ 3 garlic cloves, minced
🔹️ 2 tablespoons olive oil
🔹️ 1 teaspoon salt
🔹️ ½ teaspoon black pepper
🔹️ ½ teaspoon paprika
🔹️ ½ teaspoon dried thyme
🔹️ ½ teaspoon dried rosemary
🔹️ ½ cup low-sodium chicken broth
🔹️ (Optional) 1 tablespoon lemon juice
🔹️ Fresh chopped parsley for garnish



👉 Instructions:

✅️ 1. Season the veggies:
In a large bowl, toss the baby potatoes, sliced onion, and minced garlic with olive oil, salt, pepper, paprika, thyme, and rosemary.

✅️ 2. Layer in the slow cooker:
Add the seasoned potatoes and onions to the bottom of a 6-quart slow cooker. Place the chicken on top. Pour chicken broth evenly over everything. Add lemon juice if using.

✅️ 3. Cook:
Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is fully cooked and potatoes are tender.

✅️ 4. Optional – Broil for a golden finish:
Transfer the chicken and potatoes to a baking sheet and broil for 3–5 minutes for a crispy top. Watch carefully so it doesn’t burn.

✅️ 5. Serve and enjoy:
Garnish with fresh parsley and serve hot. Great with a green salad or warm crusty bread on the side.

🔹️ Avoid opening the lid while cooking—it releases heat and slows things down.
