π Ingredients

1 large head of broccoli, chopped into small florets

1 small onion, diced

2 cloves garlic, minced
β
4 cups chicken or vegetable broth

2 cups shredded cheddar cheese
β
1 cup heavy cream
β
2 tbsp butter
β
2 tbsp all-purpose flour (for thickening)

Salt & black pepper, to taste

Optional: a pinch of nutmeg or red pepper flakes

β‘οΈ SautΓ© the aromatics:
Melt butter in a large pot over medium heat. Add onion and cook until soft (about 4 minutes). Add garlic and cook 30 seconds more.
β‘οΈ Make a quick roux:
Sprinkle in flour and stir constantly for 1β2 minutes to make a paste β this will thicken your soup.
β‘οΈ Add broth & broccoli:
Slowly pour in the broth while stirring. Add chopped broccoli and bring to a gentle boil. Reduce heat and simmer for 15β20 minutes until the broccoli is very tender.
β‘οΈ Blend (optional):
Use an immersion blender for a smooth soup, or blend half to keep some texture.
β‘οΈ Add cream & cheese:
Stir in heavy cream, then slowly add cheddar until melted and creamy. Season with salt, pepper, and optional spices.
β‘οΈ Serve:
Ladle into bowls and top with extra cheese or croutons. Enjoy warm with crusty bread or a salad!
