🛒 Ingredients

👉 3 lbs chuck roast

🥔 For the Mashed Potatoes:

👉 6 large potatoes, peeled and chopped
🔹️ ¼ cup unsalted butter
🔹️ ½ cup milk
🔹️ Salt and pepper, to taste

1. 🔥 Preheat the Oven:
➡️ Preheat oven to 325°F (165°C).
➡️ Season the chuck roast with salt and pepper.


2. 🥩 Sear the Roast:
➡️ Heat olive oil in a large oven-safe pot over medium heat.
➡️ Sear the roast on all sides until golden brown, about 3–4 minutes per side.
✅ Remove the roast and set aside.


3. 🧅 Sauté the Vegetables:
➡️ In the same pot, add onion and garlic.
➡️ Sauté 3–4 minutes until softened.
➡️ Stir in tomato paste and cook 2 more minutes.


4. 🍷 Add Liquid and Roast:
➡️ Pour in beef broth and red wine (if using), scraping up browned bits from the pot bottom.
➡️ Add thyme and bay leaves, then return the roast to the pot.
✅ Cover and roast in the oven for 3–4 hours, or until the meat is fork-tender.

➡️ Boil potatoes in salted water for 15–20 minutes until tender.
➡️ Drain and mash with butter and milk.
