âžī¸ 1 cup sugar
âžī¸ 2 tbsp cornstarch
âžī¸ 1 cup water
âžī¸ 3 large egg yolks (lightly beaten)
âžī¸ 2 tbsp butter
âžī¸ ÂŊ cup fresh lemon juice
âžī¸ 1 tbsp lemon zest
đšī¸ For the Meringue:
âžī¸ 3 large egg whites
âžī¸ Âŧ tsp cream of tartar
âžī¸ 6 tbsp sugar

âļī¸ 1. Make the Filling
đ In a saucepan, whisk sugar, cornstarch, and water.
đ Cook over medium heat, stirring until thick and bubbly.
âļī¸ 2. Add Yolks & Lemon
đ Slowly whisk a bit of the hot mixture into the egg yolks (to temper them).
đ Return yolk mixture to the saucepan; cook 1â2 minutes more, stirring.
đ Remove from heat and stir in butter, lemon juice, and zest until smooth.
âļī¸ 3. Assemble the Pie
đ Pour the hot lemon filling into the baked crust.
âļī¸ 4. Make the Meringue
đ Beat egg whites and cream of tartar until soft peaks form.
đ Gradually add sugar and beat until stiff, glossy peaks form.
âļī¸ 5. Top & Bake
đ Spread meringue over the hot filling, sealing the edges completely.
đ Bake at 350°F (175°C) for 10â15 minutes, or until golden.
