🍋 Lemon Meringue Pie

âœ…ī¸ Ingredients

đŸ”šī¸ For the Filling:
â—žī¸ 1 baked pie crust
â—žī¸ 1 cup sugar
â—žī¸ 2 tbsp cornstarch
â—žī¸ 1 cup water
â—žī¸ 3 large egg yolks (lightly beaten)
â—žī¸ 2 tbsp butter
â—žī¸ ÂŊ cup fresh lemon juice
â—žī¸ 1 tbsp lemon zest

đŸ”šī¸ For the Meringue:
â—žī¸ 3 large egg whites
â—žī¸ Âŧ tsp cream of tartar
â—žī¸ 6 tbsp sugar


âœ…ī¸ Instructions

â–ļī¸ 1. Make the Filling
👉 In a saucepan, whisk sugar, cornstarch, and water.
👉 Cook over medium heat, stirring until thick and bubbly.

â–ļī¸ 2. Add Yolks & Lemon
👉 Slowly whisk a bit of the hot mixture into the egg yolks (to temper them).
👉 Return yolk mixture to the saucepan; cook 1–2 minutes more, stirring.
👉 Remove from heat and stir in butter, lemon juice, and zest until smooth.

â–ļī¸ 3. Assemble the Pie
👉 Pour the hot lemon filling into the baked crust.

â–ļī¸ 4. Make the Meringue
👉 Beat egg whites and cream of tartar until soft peaks form.
👉 Gradually add sugar and beat until stiff, glossy peaks form.

â–ļī¸ 5. Top & Bake
👉 Spread meringue over the hot filling, sealing the edges completely.
👉 Bake at 350°F (175°C) for 10–15 minutes, or until golden.

â–ļī¸ 6. Cool & Serve
👉 Let the pie cool for about 1 hour, then chill before slicing.
