
✅ Quick Weeknight Beef Goulash
Ingredients
2 lbs beef chuck, cut into 1-inch cubes
2 tbsp vegetable oil
1 large onion, chopped
3 cloves garlic, minced
2 tbsp sweet paprika
1 tsp caraway seeds
1 tsp black pepper
1 can (14 oz) diced tomatoes
2 cups beef broth
2 medium potatoes, diced
2 carrots, sliced
1 green bell pepper, diced
Salt, to taste
Fresh parsley, chopped (for garnish)
8 oz egg noodles (optional)
Directions
1️⃣ Brown the beef quickly: In a large pot, heat oil and sear beef cubes in batches for 2–3 minutes until browned. Remove.
2️⃣ Sauté aromatics: Add onion and cook 3–4 minutes until soft, then garlic 1 minute.
3️⃣ Add spices: Stir in paprika, caraway seeds, and black pepper.
4️⃣ Combine & cook: Return beef to pot, add diced tomatoes, beef broth, potatoes, carrots, and bell pepper. Cover and simmer 45–50 minutes until beef is tender.
5️⃣ Season & serve: Add salt to taste. Serve over cooked egg noodles and garnish with parsley.
