The ultimate cozy comfort food — tender, flavorful, and perfect for a hearty homestyle dinner!
📝 Ingredients
↪️For the Pot Roast:
3 lb chuck roast
2 tbsp olive oil
Salt & pepper, to taste
4 large carrots, chopped
4 medium potatoes, quartered
1 yellow onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tbsp tomato paste (optional, for extra richness)
1 tsp dried thyme
1 tsp dried rosemary
2 tbsp cornstarch + 2 tbsp water (for gravy)
↪️For the Mashed Potatoes:
4 medium russet potatoes, peeled and cubed
4 tbsp butter
½ cup milk or cream
Salt & pepper, to taste
🍽️ Instructions
1️⃣ Sear the Roast:
Season the chuck roast generously with salt and pepper. Heat olive oil in a large Dutch oven and sear the meat on all sides until browned. This step adds deep, rich flavor and sets the stage for a classic comfort meal.
2️⃣ Layer the Veggies:
Add onions, garlic, carrots, and potatoes to the pot. Pour in beef broth, Worcestershire sauce, tomato paste, and sprinkle in thyme and rosemary. Cover and cook on low for 3–4 hours (or in a slow cooker for 8 hours) until the beef is fork-tender.
3️⃣ Make the Gravy:
Once the roast and veggies are done, remove them from the pot. Simmer the remaining broth on the stovetop. Whisk cornstarch with water and stir into the broth to thicken — rich, savory homemade gravy ready to drizzle over everything.
4️⃣ Mash the Potatoes:
Boil peeled and cubed potatoes until soft. Mash with butter, milk, salt, and pepper until creamy. These mashed potatoes are perfect for soaking up that luscious gravy.
5️⃣ Plate & Serve:
Slice the roast, arrange with carrots and potatoes, spoon the gravy over top, and serve alongside the buttery mashed potatoes. Big portions, big flavor, big comfort.
