🍲 Slow Cooker Chicken Stew – Simplified & Organized

👉Ingredients (Serves 4–6)

✅️ 1½ lbs boneless, skinless chicken (thighs or breasts), cut into 1-inch chunks
✅️ 4 medium carrots, sliced
✅️ 3 medium potatoes, peeled & diced
✅️ 2 celery stalks, chopped
✅️ 1 medium onion, diced
✅️ 3 cloves garlic, minced
✅️ 1 cup frozen peas (add at the end)
✅️ 4 cups chicken broth
✅️ 2 tbsp tomato paste
✅️ 2 tbsp olive oil or butter
✅️ 2 tsp salt (adjust to taste)
✅️ 1 tsp black pepper
✅️ 1 tsp dried thyme
✅️ 1 tsp dried rosemary
✅️ 2 bay leaves
✅️ 2 tbsp flour or cornstarch (optional, for thickening)
✅️ Fresh parsley for garnish


👉 Slow Cooker Instructions

1. 🔹️ Prep the base:
➡️ Optional: Sauté onion, garlic, and celery in olive oil for extra flavor.


2. 🔹️ Layer ingredients:
➡️ Place chicken, carrots, potatoes, and sautéed mix into the slow cooker.


3. 🔹️ Add liquids & seasoning:
➡️ Stir in chicken broth, tomato paste, thyme, rosemary, bay leaves, salt, and pepper.


4. 🔹️ Cook:
➡️ LOW 6–8 hours or HIGH 3–4 hours until chicken and veggies are tender.


5. 🔹️ Thicken sauce (optional):
➡️ Mix 2 tbsp flour with ¼ cup water, stir in 20 minutes before serving.


6. 🔹️ Finish & serve:
➡️ Stir in peas, remove bay leaves, garnish with parsley, and serve. 🥣✨
